🥒 Cucumber & Onion Salad
Cool, Crisp, and Full of Country Flavor
There are some recipes that never go out of style, and this is one of them.
Growing up in Oklahoma, there always seemed to be a bowl of cucumber and onion salad on the table during the summer. It's simple to make, uses fresh ingredients from the garden, and somehow tastes even better after it has chilled in the refrigerator for a while.
Whether you're serving hamburgers off the grill, fried chicken after church, or a big Sunday dinner with the family, this refreshing salad is the perfect side dish. It's light, crisp, and brings just the right balance to a hearty country meal.
One of my favorite things about this recipe is that it's easy to make ahead. I often prepare it earlier in the day and let it chill until supper. By then, the cucumbers and onions have soaked up all that sweet and tangy flavor.
Simple recipes like this remind me that good food doesn't have to be fancy. Sometimes the best dishes come from a handful of fresh ingredients, a little time, and sharing them with the people you love.

Recipe
Serves: 4–6
Ingredients
2 large cucumbers, thinly sliced
1 large sweet onion, thinly sliced
1 teaspoon salt
½ cup white vinegar
½ cup sugar
½ cup water
½ teaspoon black pepper
½ teaspoon dried dill weed
½ cup sour cream (optional)
Fresh dill or parsley for garnish (optional)
Directions
Place the sliced cucumbers and onions in a large bowl. Sprinkle with salt and let sit for 15 minutes.
In another bowl, whisk together the vinegar, sugar, water, pepper, and dill until the sugar dissolves.
Drain the cucumbers and onions and pat dry.
Pour the dressing over the vegetables and toss to coat.
Stir in the sour cream if using.
Cover and refrigerate for at least 30 minutes before serving.
Garnish with fresh dill or parsley if desired.
