Turning Leftover Hamburgers into a Family Favorite

There are nights when I just don't feel like making hamburgers again, even if there are a few leftover patties in the refrigerator. Around here, leftovers are just the beginning of another meal.

Last night's grilled hamburgers became tonight's supper with a little butter, a sweet onion, homemade brown gravy, and a pan of creamy mashed potatoes. It's simple country cooking at its best—using what you have, wasting nothing, and putting another hearty meal on the table.

That's one thing I love about cooking. A little creativity can turn yesterday's leftovers into a meal that tastes completely different. Around here, we call that cooking smarter, not harder.

At Cluck It Homestead, we try to make the most of every meal. Stretching groceries isn't just about saving money—it's about honoring the food we've worked hard to grow, preserve, or bring home.

So if you have a few leftover hamburger patties in the refrigerator, don't overlook them. Smother them in onion brown gravy, serve them over mashed potatoes, and enjoy a meal that might become even more popular than the original hamburgers.

Sometimes the best supper isn't the one you planned—it's the one you create from what you already have.

This recipe is part of my upcoming cookbook, The Oklahoma Homestead Woman's Family Favorites, and will also appear in The Oklahoma Homestead Woman's From Last Night's Supper, a collection of recipes that give leftovers a delicious second life.

Ingredients

3 leftover cooked hamburger patties

1 large onion, sliced

2 tablespoons butter

2 tablespoons all-purpose flour

2 cups beef broth

1 teaspoon Worcestershire sauce

1/2 teaspoon garlic powder

Salt and black pepper to taste

Directions

Melt the butter in a large skillet over medium heat.

Add the sliced onions and cook until soft and lightly caramelized, about 10–12 minutes.

Sprinkle the flour over the onions and stir for 1–2 minutes.

Slowly whisk in the beef broth until smooth.

Stir in the Worcestershire sauce, garlic powder, salt, and pepper.

Bring the gravy to a gentle simmer until it thickens.

Nestle the leftover hamburger patties into the gravy, spooning the onions over the top.

Cover and simmer for 8–10 minutes, just until the patties are heated through.

Serve over a big scoop of mashed potatoes with plenty of onion gravy.

Pull Up a Chair...

Some of the best meals around here start with leftovers. A few hamburger patties from the night before, a couple of onions, and a pan of rich brown gravy can turn into a meal that tastes like it was planned all along. Around our table, nothing goes to waste if it can become another supper.
