Homestyle Beef Enchiladas: Two Pans, One Happy Family
Some recipes become family favorites because they're fancy. Others become favorites because they simply work.
These Homestyle Beef Enchiladas are one of those recipes at our house.
They're easy to make, use simple pantry ingredients, and best of all—they make everyone at the table happy.
The funny part? We never make just one pan.
I love red enchilada sauce, while Chris has always preferred green enchilada sauce. Instead of debating which one to make, I simply divide the filling between two baking dishes. One gets red sauce for me, and the other gets green sauce for Chris. It only takes a few extra minutes, and everyone gets exactly what they like.
Sometimes the simplest little traditions become the ones your family remembers the most.
The filling couldn't be easier. Brown a pound of hamburger with chopped onion, stir in a can of green chilies, then mix in half a can of enchilada sauce. Spoon the mixture into flour tortillas with plenty of shredded cheese, roll them up, and place them seam-side down in a baking dish.
Then comes the best part—pour the remaining enchilada sauce over the top, sprinkle on more cheese, and bake until it's hot, bubbly, and golden around the edges.
Serve them with Mexican rice, refried beans, chips and salsa, or a fresh garden salad for a complete meal.
This recipe is another reminder that good home cooking doesn't have to be expensive or complicated. A handful of pantry staples, a pound of hamburger, and a little cheese can turn into a supper everyone looks forward to.
And if your family can't agree on red or green sauce...
Just make both.
